Fabiana Scarica and Arturo Scarfato from the restaurant Villa Chiara – Orto&Cucina in Vico Equense show their recipe: Codfish with broccoli salad, sea urchin sauce, candied lemon and fish eggs.
Ingredients
codfish 240gr
fish eggs (codfish)
broccoli 400gr
100gr sea urchin pulp
1 lemon
extra vergin olive oil
sugar
Method
Clean the codfish and cook into a court-buillon for about 5 minutes. Peel the lemon and immerse the skin in sugar syrup (they get candied lemon). Cook the broccoli with boiled water and dress with oil and lemon juice.
How to make the sea urchin sauce: Blend the sea urchin pulp together with oil and salt, until they get a sauce.
How to serve:
Place the codfish and the sea urchin sauce at first, then put on the broccoli and then grated lemon peel, fish eggs and oil.
