Today the chef Francesco Fichera will show us his recipe ( in cooperation with GMA Import Specialità ) : Gourmet sandwich with buffalo beef
Ingredients
1 Petra sandwich ( made with Petra flour )
1 buffalo hamburger 180gr “buffalo beef #ficheraversion 60gg frollatura”
30gr homemade mayonnese ( if you can ) add aromatic herbs to it (thyme, rosemary, majoram, chervil, lavender)
80gr endive “L’Orto di Lucullo”
15gr pitted olives
30gr celery
1 candied hot pepper
80gr buffalo cheese
15gr vinegard cream with saffron
1 onion
1 egg yolk
How to make the vinegard cream with saffron
5gr saffron
100ml white vinegard
100gr white sugar
Method
Cook the vinegard at 75 grades and pour the saffron and sugar. Leave it rest for 1 night. The day after, bring it to boil and make it thick as they prefer.
How to caramelize the hot pepper
10 fresh hot pepper
50gr honey
20gr cane sugar
Method
Cut the hot peppers and get all the seeds, then put them into a pan with boiled water and cook for 40 seconds and stop cooking using water and ice. Melt honey and sugar and add the hot peppers.
How to make the sandwich
Bake the onions at 65 grades and spread the egg yolk on the top of the sandwich. Bake everything at 180 grades for 4 minutes. At the same time, grill the hamburger, 2 minutes side. Season with oil, salt and pepper and bake for 1 minutes more at 170 grades. Cook the endive with olives and add celery to it.
Now, they are ready to make their sandwich!
