The chef Fabiano Borea from the restaurant “Le Tre Vele” in Salerno shows his recipe of “Red shrimps tartara”.
Ingredients:
200gr fresh red shrimps
100gr herbs ( red turnip sprout, celery and salsola soda, thyme )
20ml citrus fruit gel
Salt, pepper, extra vergin olive oil
Method
Peel and devein the shrimps. Mix them all together and beat in order to make a circular form. Add oil and thyme, then put into the freezer. When one is ready to serve has to take the “shrimps dough” back from the freezer and plate with the mix of herbs and citrus fruit gel on the top…
